  • Drip is a machine where you can’t really control much to begin with.

    Pour over on the other hand: you can control the pours, temps, all the weights, time including the bloom time.

    Use a goose neck kettle to control pour intensity. I also use a fake melodrip to reduce agitation.

    I use two one minute blooms using 2x the grind weight. Then two or three pours of the balance of water with as little agitation as possible. Water temps are in the 93 to 95F range.

















  • Many years ago (20+ at this point) I was using either a French Press or a generic Melitta 4 cup brewer with the dreaded Hario Skerton and no scales, just brewing by scoops of grounds and a volume of water. The beans were all dark roast supermarket brands.

    Fast forward to 10 or so years ago and I get a Knock Feld 2 grinder and a kitchen scale and start buying better beans. Still the generic Melitta 4 cup and better beans. Start getting really nice cups. A few years ago, I decided to try Moka Pot to be more green/less plastic and less waste. I tried to science the Moka Pot for about 1.5 years but the number of terrible cups to drinkable cups was too high. Very unforgiving. At some point I also get a Helor 101 grinder since I was brewing at home and the office. Moka Pot at home and generic Melitta at the office.

    I buy a Clever Dripper and the world changes for the better. Almost every cup is at least good with many being great. The amount of my personal involvement time needed to brew is so small. No concerns about pouring style and no need for a goose neck. I got a Fellow Opus because after a decade of hand grinding I was done with that. The Clever Dripper is moved to the office because of the convenience and time savings. Generic Melitta at home.

    I got a V60 to try and liked it a lot. I got a Fellow Ode 2 for use with the V60 at home. Fellow Opus moves to the office. No more hand grinding at all now. Really liking the V60 at home but exploring other options. I get a Kono MDK-41 which uses the V60 filter papers. I like it more than the V60 because it seems to allow less bypass.

    No more French Press for me normally but I do still use it when I have a lot of guests because it is a large FP. I still hate the clean up of the FP.

    Personally, I feel like the Cleve Dripper (and also the Hario Switch for those with deep pockets) is the best entry point for someone new to home brewing. No goose neck needed. Easy and repeatable cups.
