I’ve used the duckduckgo browser for a bit which is nice. You can disable all of the AI features there.

When Debian Trixie with GNOME started with Wayland by default, I switched too. It’s not bad I guess.

Stable Diffusion made one blip and the technology, everything it stood for was a joke before and after that that single blip. The fact that someone gave that tech the time of day is ridiculous.
